Christmas Spiced Florentine Fruit and Caramelised Nut Mix | Recipe

Need the perfect snack to serve while guests wait eagerly for Christmas dinner? Or just need the perfect Winter energy to keep you going as you wrap presents? Well then look no further than Fruit For The Office's perfect recipe that tastes exactly like Christmas.

Like eating deconstructed florentine, the dark chocolate mingles perfectly with caramelised cinnamon and ginger nuts and dried cranberries, cherries and raisins. 

Easy to make and so quick, we really don't recommend preparing in advance (because you'll eat it all to yourself before it can even be served!)



Christmas Spiced Florentine Fruit and Caramelised Nut Mix Recipe


  1. Preheat oven to 190C
  2. Mix the nuts, butter, maple syrup, sugar, salt, cinnamon, ginger and nutmeg in a bowl until evenly coated
  3. Spread the mixture in a single layer onto a baking tray lined with greaseproof paper
  4. Bake for 10-15 minutes, or until browned, stirring frequently throughout to avoid burning
  5. Let the nuts cool then mix with the cranberries, cherries, raisins and dark chocolate chips and serve!

The 12 Hours of the Christmas Office Party

If you can't find them - then you are probably one of them! In the bathroom, frantically picking at spots or asking around the office for some Spanx to borrow thanks to the dreaded belly bloat - you'd think you were headed out to The Oscars, not your local carvery followed by a Yates...

We all know we're going to go for the tried and tested red lippy with a swish of eyeliner but we'll still watch YouTube videos and convince ourselves that tonight is the night for a dramatic smokey eye. Fast forward to later this evening when you'll be frantically rubbing black eyeshadow from your face whilst the taxi beeps impatiently outside - just save yourself the hassle (and potential panda eyes)!

Secret Santa. The two words that strike fear into the heart of many an office worker. The night before work you'll run aimlessly around a Boots before it closes trying desperately to work out if Sarah from Marketing would prefer a bath cream gift set or a bath oil gift set. On the plus side, you get to watch as your more innocent colleagues blush at highly inappropriate gag gifts (then laugh as they make a reappearance later on in the night once everyone gets a bit merry!)

You chose it weeks ago, you know it looks good and you know it's the perfect combination of sexy and subtle but you'll still try on everything from your one formal gown to a Rudolph onesie. Still, once the outfit is on, the statement necklace you bought will suddenly look gaudy and your perfect clutch bag doesn't fit your roll-up flats. But no matter how amazing you totally look, you'll just wish that paying extra for ASOS Premier meant you received clothes instantly.

Arriving fashionably late never goes out of style and it means that small talk with your boss won't be an unfortunate eventuality. However, everyone will probably think of the same plan so no matter how late you think you are, you'll almost always be first. Better get ready to talk about how bad the traffic to the venue was...

You've exhausted the supply of table snacks and that 'superfood salad' you promised yourself would be a healthy choice has just made you wish for even more goose fat potatoes. Now watch as those sat next to you receive their meals first and feel the intense jealousy that comes with choosing the least popular meal option. You'll almost eat the arm off the waiter when your meal arrives.

"Oh, so who did you come here with?" "Umm I'm actually blah blah from the blah department, I've been working here for five years" Make sure you have a decent knowledge of who works in your office and give everyone a quick hello or even a chat about their Christmas plans - you'll may even wonder why you never spoke to some of your colleagues before! (Or realise exactly why you never wanted to speak to some of them in the first place...)

The food has been cleared, desserts devoured and now someone has promoted the entire staff from red wine to tequila shots. Get ready to head out to the nearest club/bar and have fun! But try to keep it together - especially around your Instagram-happy colleagues.

The alcohol won't just convince everyone they can dance, they'll also think they're the master of seduction. Although you'll be quick to start a conga line away from every creeper that tries it on with you, just be sure that you don't do the same to your office crush! Monday morning but be a bit awkward after you've confessed your undying love to them and their cute dimples.

Throughout the night you might make uncomfortable eye contact with the colleagues copping a feel on the dancefloor or you might have to hold back the hair of the intern that's had way too much. But, no matter what you saw (or how much of it you saw!) you're the perfect office party guest and will swear yourself to silence - and a few knowing glances across the office kitchen, of course...

No-one needed to know how much you loved cute dimple guy in 140 characters. And now it's been retweeted by your friends and no amount of deleting will stop their joking on Monday. But, oh well, you tweeted that video of them trying to twerk whilst eating a doner kebab and that's worth a million "I love cute dimple guy" tweets.

And a trip in a warm taxi!

Phew! Full of turkey, tequila and late night curry chips, you are still feeling great - at least until tomorrow morning... Make sure you keep a big glass of water by the bed and a few ibuprofen (You'll thank us later!)

#FestiveFruitFriday - Perfect Christmas Pudding Recipe


It may only be the day after Halloween but it's never to early to start drowning out the office with 'Now That's What I Call Christmas', gorging on mince pies and spraying fake snow on everything. It's also never to early to start making your Christmas Pudding! Christmas puddings taste the best the longer they've been left to mature, so you might even want to use the recipe to make two and have an incredible pud next year too! (Or if you recognise this recipe from last year, you may already have one ready to slosh brandy on on the 25th!)

You'll Need:

  • 110g shredded suet
  • 110g sultanas
  • 110g raisins
  • 250g currants
  • 25g finely chopped mixed candied peel
  • 1 small cooking apple, peeled/cored/finely chopped
  • zest of 1/2 large orange
  • zest of 1/2 lemon
  • 55g self-raising flour
  • 4 tbsp good quality brandy (and some extra for topping up)
  • 1 tsp ground mixed spice
  • 1 1/2 tsp ground cinnamon
  • 110g soft, dark brown sugar
  • 110g white breadcrumbs
  • 25g chopped almonds
  • 2 large eggs
  • 1/4 tsp nutmeg
  • 2 1/2 pint greased pudding basin
What to Do: (Serves 8-10)
  1. Place the sultanas, raisins, currants, candied peel, apple, orange and lemon into a large mixing bowl. Add the brandy and stir. Cover the bowl and leave to marinate for anytime between overnight up to a few days (Leave it over the weekend in the office if you like!)
  2. In another large mixing bowl, stir together the flour, mixed spice, nutmeg and cinnamon. Add the suet, lemon and orange zests, brown sugar, breadcrumbs and almonds and stir together until all ingredients are combined. Add the marinated fruits and stir again.
  3. Beat the eggs into a seperate bowl then add to the mixture and stir in until all ingredients are combined.
  4. If you so please, now's the time to add your loose change to the bowl!
  5. Spoon the mixture into the greased pudding basin, pressing down on the mixture with a spoon. Cover with a layer of greaseproof paper, then a layer of tin foil then, finally, tie up with string. 
  6. Place the pudding in a steamer over a pan of simmering water and steam for 7-8 hours, taking care to frequently check the water level so that it is not boiling dry. The pudding will be a deep brown colour once cooked.
  7. Remove the pudding from the steamer and leave to completely cool down. Remove the wrapping, make a hole with a skewer and add more brandy. Cover with a new sheet of greaseproof paper, tie up again and store until Christmas Day.
  8. Feel free to top up the pudding with extra brandy every week or so for more of a boozy dessert!
  9. Be sure to not eat immediately, leave for a few weeks and only reheat to serve on Christmas Day. 
It may seem a lot easier if you just bought your own pudding but there's nothing like the satisfaction of keeping to tradition. You can even leave the fruit to marinate from Friday until you come back on Monday then make the rest of the pudding in the comfort of your own home! 4 Best Homemade Christmas Gifts

Hand made gifts are lovely, thoughtful and far more personal than anything you can expect to pick up in a shop. They are also perfect when you’re on a bit of a budget or – heaven forbid – you forget someone at the last minute. Here are our top 4 hand made gifts that we’d be genuinely happy to receive.
  

Mulled Wine Set


A bottle of premixed mulled wine is a decent enough gift, but this year you can make it extra special by putting together a Mulled Wine Making Set. For this you’ll need

  • Presentation box – big enough and sturdy enough to support a bottle of wine
  • Bottle of red wine
  • Muslin cloth
  • 50g demerara sugar
  • Cinnamon Stick
  • Dried orange peel
  • Dried lemon peel
  • 3 cloves
  • Grated nutmeg
  • Orange


Directions
Place the sugar and spices in the centre of a piece of muslin cloth, gather up the edges and tie with some string.
Place the spice parcel, bottle of wine and orange in the presentation box – might be nice to fluff this up with a bit of tissue paper.
For an extra special touch, write some hand written instructions and a personal message on a card.

TIP: You don’t need to spend loads of money on the wine. Opt for a few bulk buy deals in the supermarket and you can make the same gift for a few friends.

Lemon shortbread


Shortbread is one of the easiest biscuits to make. Here’s what you need

  • 50g castor sugar
  • 100g butter
  • 150g plain flour
  • Zest of half a lemon





Directions
Cream the butter and sugar together until light and fluffy.
Stir in the lemon zest.
Gradually add the flour and mix until a smooth dough forms.
Roll your dough out the cut into shapes and place onto a baking tray.
Bake for 10 – 15 minutes until golden.
Leave to cool slightly then sprinkle with some more caster sugar.

Once they’ve cooled you can place them in jars, or presentation boxes to gift to family and friends.

TIP: You can add anything you fancy to the basic shortbread mixture including chocolate chunks, dried fruit an nuts.

Orange Vodka


Usually infused vodkas can take months to make – this recipe can be done in around 4 days so it’s a perfect last minute option. It’s also easy to do, pocket friendly and the end result looks like you’ve gone to lots of effort. For this you’ll need

  • Air tight jar – you can use an old jam jar provided it’s nice and clean
  • Pretty glass bottles – must be clean and airtight
  • Bottle of decent vodka
  • One orange



Directions
Peel the orange rind off in thin strips. Be very careful to avoid the pith as it will make the vodka bitter.
Place the rind in an airtight jar and top up with vodka. You’ll need around 3 slices per 100ml of vodka.
Leave to rest in a cool dark place returning to taste it every day. Give it a good shake before tasting.
You want a nice orange flavour but not too bitter – if you leave it too long it will get pretty bitter.
Once you’re happy with your creation, strain into a pretty bottle and present to your giftee.


TIP: If you go for smaller glass bottles, you can make one large bottle of vodka stretch to make a few different flavours – lemon, lime, berry or apple.


Nutty Brittle


This is a great way to liven up the staple nut selection that everyone likes to munch on over Christmas. You can also make this gift up in different batches so you can present different people with their favourite nut. 
  • 100g of your chosen nut
  • 100g Caster sugar






Directions
Place your sugar in a pan and put on a low heat.
Move the pan around as the sugar begins to melt until it turns into a deep caramel colour.
Add your nuts and move the pan around until they are completely coated.
Pour out onto a baking tray lined with greaseproof paper.
Leave to set in a safe place.
Once completely cooled you can smash it into pieces and box it up.

TIP: You could try presenting this gift whole in a little tray along with a tiny hammer so the lucky eater can break it up themselves.

Leftovers


I know it’s seems odd to talk leftovers before Christmas day, but on this occasion we’re talking Fruit For The Office leftovers. Chances are there may be a few bits and bobs rolling around in your office fruit bowl at the end of the day as everyone opts for choccies over apples. So scoop up the remaining fruit, take it home and get creative. These goodies will also make great last minute Christmas presents too!

Clove Oranges

Grab an orange, grab some cloves and begin to push them into the orange, be as organised or as random with the pattern as you wish.
These are great for decorating the home; left at room temperature they will release a beautiful aroma.


Apples Slices

This works for any type of apple and they can be strung up into garlands once finished
  • Core the apples
  • Slice them into 1cm thick slices so the core hole is in the centre
  • Soak in lemon juice then pat dry and brush with a little allspice
  • Bake them in he oven on the lowest setting for around 5 hours
  • Flip them every hour

Orange Slices

These will make lovely fragrant decorations for the tree
  • Cut oranges into slices around 1cm thick
  • Bake in the oven on a tray at the lowest temperature setting for around 4 hours
  • Flip them every hour
  • Take them out when they are almost completely dry
  • Poke a hole in the top, thread some string through and hang them on your tree

Sugared Nuts

This recipe works for any kind of nut – so if there are any floating around from your last fruit delivery this is the thing to do with them. The recipe works per 100g of nuts
  • 100g almonds, pecans or walnuts etc.
  • 2 medium egg whites
  • 1bs soft brown sugar
  • 1tsp of all spice
Mix all of the ingredients in a bowl, places onto a baking sheet (preferable non stick) and cook on 200C for 5 minutes.
